Crispy fried eggplant (aubergine) recipe with salted egg. Fast and delicious to make

This eggplant dish is still uncommon but very delicious. It makes the vegetable so much more different than what you are currently used to. I hope this inspires you to make this dish.

This dish is easy and fast to prepare, perhaps 15 minutes. Just follow the steps and it will be a delicious outcome. Eggplant is also known as aubergine in some countries.

Preparation and Ingredients

These are all the ingredients you will need to cook this dish

  • 1 eggplant
  • 1 salty egg
  • 1 tbs margarine
  • 2 garlic
  • 2 curly chili
  • 2 small spring onion
  • 1/2 tsp mushroom powder (optional)
  • Oil to fry
  • Flour composition:
  • 1 cup all-purpose flour
  • 1 tbs corn starch
  • 1/4 tsp salt

Start off by cutting the eggplant in cubes. You can cut the onion leaves, garlic, and chili in very fine pieces. For mashing the salted egg I used no tools, just my bare hands. It’s just one egg.

The flour composition is: 1 cup all-purpose flour, 1 tbs corn starch and 1/4 tsp salt. Put about 2 soup spoons in another bowl and add water. Mix it it well. In the bowl with the flour mixed with water is where you put the cut eggplant first.

Make sure it gets soaked well, stir it well. After this, add the soaked eggplant in the mixture of flour. Make sure every surface is covered.

Warm oil, and when it’s ready to add the eggplant covered in the mixture of flour. Fry until it’s golden brown. It will be very crispy 🙂

step 4: Making the salty egg sauce

Warm some margarine or butter in a pan on low fire. Then add the chili and garlic to it.

After a minute or 2 add the mashed salty egg.

In a few minutes, it will look like a creamy sauce, like the picture below. The trick is to keep stirring it and put on medium heat.

Step 5 Serving it on a dish with salted egg sauce on top

Add the crispy fried eggplant on a plate. On top of that add the salted egg sauce, and sprinkle it with onion leaves.

Cut and Mash: Cut the eggplant in cubes, cut the onion leaves garlic and chili in fine pieces. and mash the salted egg.

soaking and covering in flower: Remember the flour is a composition of all-purpose flour, corn starch and salt. Divide it about 70/30. Add water to the 30% of flour. Soak the eggplant and mix it.After this mix it in the dry flour.

Fry untill crispy: Fry it untill golden brown. It will be crispy and delicious already. but we are going the extra mile to make it extra delicious.

Salted egg sauce: Warm margarine or butter. Add garlic and chili fry for short moment and add the mashed salted egg. Keep stirring and add salt and seasoning (optional). Keep stirring on medium heat until it becomes creamy.

Serving: Add the crispy eggplant on a plate and on top of that add the salted egg sauce. Sprinkle it with onion leaves and voila, a delcious dish ready to serve.
