Let’s start getting creative with cooking. This popular spicy potato recipe is originally from Indonesia. It is called “Kentang goreng sambel”, and it just might be something one can be craving for. Before we go any further let’s check the ingredients. Note that this is without MSG.
- 1 kg of potatoes
- 500 gr of chicken liver
- 2 pcs of bitter bean
- 1/2 box of instant coconut milk
spices to grind
- 7 cloves of onions
- 5 cloves of garlic
- 2 small tomatoes
- 2 cm turmeric
- 3 pcs curly red chili
- 3 pcs big red chili
- 1 tsp salt
- 1 tbs sugar
- 2 pcs of galangal
- 4 cm of ginger
- 3 pcs of bay leaves
- 3 pcs of lemongrass
- 3 pcs of lime leaves
The list is quite a lot, and if you don’t like it spicy you can just leave out the chilies.
Steps Cooking this potato dish
So we got a lot of ingredients, and all these will be making a tasty dish. There might be something you dislike and you can try to make the spicy potato dish without it. Even leaving out all the sambal or chili and it would still be a tasty dish. But the following this step by step guide will follow using all the ingredients.
I start first by cutting and then with cooking. It’s easier this way. There is a YouTube cooking video of mine at the end of the steps (please subscribe).
Cut the potatoes in small cubes
Crush and cut garlic and onions.
Cut small red and long chilies in thin slices.
Cut a bug chili, but remove it’s seeds.
This is actually optional step, I am unsure if you can get bitter beans, also known in Indonesia as papan petai.
Cut 2 pieces of tomatoes in one eights.
Cut turmeric and ginger in the size of your finger.
Smash 4 pieces of lemongrass, this will help release aromas and flavor in the this.
All the herbs you just cut, onion, garlic, chili, turmeric, tomatoes, salt and sugar should be smashed and ground. I use stone pastel.
This is how it should look, the process can be a bit long. If you have a blender it’s also optional to use this.
Step 11: cooking the spicy potato recipe
boil the potatoes 3-5 minutes. They will be half done only. It’s on purpose because it will be fried later.
Boil the chicken liver for 15 minutes. It is surely done by this time.
Cut the chicken liver in small cubes as preparation for later.
Fry the potatoes without oil, you can grease the pan a little bit. Get the potatoes gold brown.
Fry the mixture of herbs from step 10, you don’t need oil.
Add 100 ml coconut milk while it is getting warm.
Add Lemongrass, Bay leaf, lemon leaf, galangga and ginger
Add sugar salt and seasoning now. I use mushroom powder as a seasoning to avoid MSG.
Add the chicken liver to the mixture.

I made this spicy potato recipe since it is a popular dish from Indonesia. I never made it myself before starting to cook for my YouTube channel. The dish is not hard to make, you just need a little bit of patience and a lot of ingredients.
Some of the ingredients you can leave out if you don’t like it. However, if you follow my recipe step by step, you get a potato dish rich in flavors. It was very delicious and I savored every bite.

Put it on the fire, Fry the potatoes for 15 minutes * the function of oil here is to reduce the risk that the potatoes will stick to the pan. 4) fry the potatoes on the pan until the sides of the potatoes is a little bit dry 5) smoothen the spices, you can use a blender or food chopper 6) stir fry the blend spices without oil, add coconut milk mix it. 7) Add Salt, Sugar, mushroom powder and sweet soya sauce, stir together. 8) when the sauce is cooked, add chicken liver, stir together 9) Add potatoes and bitter bean, stir together. 10) healthy Potatoes sambal is ready to serve
